Chicken Liver Parfait with Brandy by James Martin

Your Terrine comes in a mould. It will arrive frozen. If you want to use your Terrine on the day, or over the next couple of days then store it in the fridge. This is the best way to let it fully defrost. If you are in a hurry it is possible to defrost the Terrine by placing it in a bowl of cold water to aid defrosting. If you plan to keep your Terrine for later use then put it into the freezer where it can be stored up to the best before date printed on the pack. Defrost it in plenty of time as above when you want to use it.
The Terrine is served lightly chilled. Dip the mould in warm water to warm the sides, then remove the top film before running around the inside of the mould with a small knife and turning the Terrine out. To slice, use a clean sharp knife dipped in hot water, wipe clean after each slice.
Once defrosted or opened store in the fridge and eat within three days.

Best served with melba toast, a tossed salad and your choice of chutney.
